Waffles (Best ever!)

From the "Dickinson's Kitchen Secrets" cookbook, compiled by the Women's Guild and the Plymouth Club of the First Congressional Church in Dickinson, North Dakota (1951).

Waffles
(Light and fluffy, with a crisp outside- heavenly!)

2 C pastry flour
4 tsp baking powder
1/4 tsp salt
2 tbsp sugar
2 eggs (separated)
1 1/4 C milk
6 tbsp melted butter

Sift dry ingredients together. Beat egg yolks and add with milk into dry ingredients. Beat until batter is smooth. Add melted butter and fold in stiffly beaten egg whites. Put on hot waffle iron for 3 to 4 minutes. Makes 6 waffles (or 3 BIG circular-type waffles).
