Use Wool or Denim insulation?

Probably rockwool or fiberglass, the only non-combustible types of batten insulation that I know of.

Of course, faced fiberglass is also potentially very flammable too! Maybe we should just leave those cavities empty ;)

Yes, fiberglass or mineral wool. She has pictures of burnt down houses where you can still see the pink insulation. An empty cavity wouldn't necessarily be better as it could act as a chimney. Personally I don't see the purpose of paper faced insulation. It's not a vapour retarder and probably wouldn't be much use as an air barrier either.
