What is going on with this wood?

But there is no "heart maple", it's the same color all the way through.

Some kind of white pine, perhaps western "ponderosa pine"
Pine can have curly/quilted/birdseye figures too.

? I'm sure there is heart maple, it just means the inner, dead wood of the trunk. "Curley" and what not refers to the cuts ...

Ahhh,see I'm not familiar with western pine. I doubt there is much of that here in WI.
My guess was based on the common woods I see around here.
