That door is going to be so satisfying to strip! You should be able to get the caulk out piecemeal with a pick.

Your doorplate/knob is from the 20's, though. It's art deco.

Take the knob off then remove the plate; the caulk will probably come off with the plate. If not you may have to dig it out.

it's a beautiful door. I wonder if being so early, would they have used a single pane?

Honestly, I wouldn't polish it. The patina brings the pattern out nicely. Plus, and this is the purist in me coming out, most of these weren't shiny in the beginning anyway.
