Before getting to your last paragraph, I was going to point out all of that white.

My dining room cabinet, with leaded glass doors, has a latch that looks a lot like this:

I hate to see that done to original cabinets, but I understand where eclecticcottage is coming from. I like that. Part of the idea was to try to draw out the detail work/trim (what was left white). With it all white, it kind of ended up buried, in fact, the neighbors across the street who have lived there 30 or so years didn't even know that it was there! I'm not sure how to just paint the inside ...

If you fill the openings with mineral wool panels, you'd also be adding some fire stopping to your walls.
